Ingredients for Dosa Batter:
1 cup idli rice
1/2 cup urad dal
1/4 tsp fenugreek seeds
1/2 tsp salt
water, as needed
Ingredients for Masala:
4-5 medium sized boiled potatoes, mashed
1 medium sized onion, chopped
2-3 green chilies, chopped
1/2 tsp mustard seeds
1/2 tsp cumin
1/2 tsp turmeric powder
1/2 tsp red chili powder
1/2 tsp salt
1-2 tbsp oil

How to make delicious crunchy masala dosa
Wash the rice and urad dal together in water till the water runs clear. Soak them separately in enough water for at least 6-8 hours.
In a grinder, grind the urad dal and fenugreek seeds to a fine paste. Add water as required. Put it in a mixing bowl.
Then grind the rice a little coarsely. Add water as required. Take it out in the same mixing bowl.
Add salt and mix both the batters together. Cover the bowl and let it ferment overnight or in a warm place for 8-10 hours.
Heat oil in a pan for the spices. Add mustard seeds and cumin seeds. Let them crackle.
Then add chopped onions and green chillies. Fry for a minute.
Add turmeric powder, red chili powder and salt. mix well.
Then add mashed boiled potatoes and mix well. Cook for 2-3 minutes until everything is mixed well.
To make the dosa, heat a dosa tawa or non-stick pan on a medium flame.
Grease the tawa with oil. Pour a ladleful of batter on the pan and spread it in a circular motion to make a thin dosa.
Cook the dosa on a low to medium flame till the surface starts to dry and the edges turn golden brown in colour.
Add a spoonful of potato masala on one side of the dosa.
Gently fold the dosa in half and serve hot with coconut chutney, sambar and tomato chutney.
